1 tbsp sesame oil (or avocado oil)

1 small red bell pepper, thinly sliced

1 cup shredded carrots

1 cup snap peas or broccoli florets

3 tbsp tamari or soy sauce (low-sodium if preferred)

1 tbsp lime juice

1 tbsp maple syrup or coconut sugar

Cook the rice noodles according to package instructions. Drain, rinse under cool water, and set aside to prevent sticking. -
