Ingredients

2 cans salmon (14–15 oz), drained and flaked

1 large egg

½ cup breadcrumbs (or crushed crackers)

2 tbsp finely diced onion (optional)

1 tbsp finely diced bell pepper (optional)

1 ½ – 2 tsp Organic Seafood Rub (adjust to taste)

1 tbsp fresh lemon juice
-
1–2 tbsp mayonnaise (for moisture)

2 tbsp olive oil or butter (for frying)
Instructions

Prep the Salmon
Drain the canned salmon and remove any bones. Place into a mixing bowl and flake with a fork. -
Mix the Ingredients
Add the egg, breadcrumbs, diced onion/pepper, mayonnaise, lemon juice, and Seafood Rub.
Mix until everything comes together. If the mixture feels too wet, add a little more breadcrumb. -
Form the Croquettes
Shape into small patties — about 6–8 depending on size. -
Pan-Fry
Heat olive oil or butter in a skillet over medium heat.
Fry each croquette 3–4 minutes per side, until golden brown and crispy. -
Serve Warm
Enjoy with lemon wedges, tartar sauce, a simple salad, or creamy mashed potatoes.
